You are what you eat. We’ve known this for a long time. Michael Pollan’s observation took it a step further: you are what what you eat eats. This is especially relevant when choosing grass-fed versus grain-fed beef, or wild versus farmed salmon, for example. A growing awareness of nutrition and neuroscience is helping us understand just how important what you eat (and what what you eat eats) truly is, even if Hippocrates said ‘all disease begins in the gut’ over 2,300 years ago.
